Pepper Ridge Sandwiches

Wow.. That is what I can say about dinner tonight. We tried the Pepper Ridge Sandwiches in the book My beef with meat by Rip Esselstyn. So these are the ingredients that we used. Bell peppers, portobello mushrooms, barbecue sauce, balsamic vinegar, oregano, minced garlic cloves, Ezekiel 4: 9 Sesame Sprouted Whole Grain Bread, Hummus, baby spinach. We also had homemade french fries. Sliced potatoes baked and then broiled with no oil.
